Over the last ten days or so we've enjoyed some very tasty meals at our house.  Last week was one of those weeks when Lee surprised me with picking out meals for the week and did all the shopping to go with them.  I absolutely L-O-V-E that!

Lee's schedule has lightened up enough that we've been able to cook together in the evenings.  We've tried some fun new recipes that I thought I'd share:

1) Chicken breasts stuffed with Artichokes Sun Dried Tomatoes and Fontina (so easy - so good!)

2)  Grilled Asparagus Frittata (the goat cheese is a must - and we probably need to invest in a more appropriate pan)

3)  Penne with Swordfish, Capers and Olives (this was my favorite of the week!)

4) Greek Lamb Kabobs (We improvised and used steak. It was still good!)

4) Roasted Vegetable and Sun Dried Tomato Soup - unfortunately I don't have a link for this one.  But it is relatively easy, VERY good and very healthy!

You all know how much Lee and I LOVE treats -- and we've found the ultimate fall treat.  Trader Joe's is currently selling Maple Leaf Cookies.  We fell in love with maple filled cookies on our honeymoon in Canada and were so excited to find them at TJs lately.  It's a seasonal treat so we stocked up on half a dozen boxes to get us through the next few months.  We even tested out a new recipe using them - Maple Ice Cream with pieces of the Maple Leaf Cookies.  Yum!!!

But that's not all - in the last few days Lee has whipped up 5 dozen snickerdoodles, a batch of Andes Mint Ice cream AND a couple batches of Animal Cookie Ice cearm (the Mother's kind).  I married the right man!!!
