Trdelnik

Trdelnik This time last year we were in Prague and couldn't get enough of the street food.  Our favorite thing was Trdelnik, an Eastern European sweet bread cooked on a spit over charcoal and coated in sugar and almonds.   About a month ago I mentioned to Lee that I would do anything for another taste of Trdelnik.   That's all the encouragement my very resourceful husband needed to hear - and within a week he had researched and ordered everything necessary to make Trdelnik at home.

He started with finding a motorized rotisserie for our Weber grill and ordering a 6 foot rod of solid maple.  Once it arrived, he then turned the maple into six rollers by drilling holes down the center of each and adapting them for the square rotisserie with anti-turn washers.

The next job was mine.  I was tasked with making the dough.  When we first bit into the Trdelnik it reminded us of Babka, a Polish Christmas breakfast bread my mom makes every year.  Lee did more research and most of the recipes we found online for Trdelnik were very similar to the babka dough.    We tried out one of the recipes and it failed miserably.  It never rose and we dumped it directly into the trash.  A couple weeks later we decided to go with the tried and true babka dough.   That's where we should have started in the first place; it was perfect!

When the dough was looking promising, we invited a few friends over from our ward to see if they would be wiling to be part of our experiment.     They all came and were happy that they did.  After working the kinks out of the first batch, Lee had it down to a science and every 15 minutes we served up three more delicious Trdelnik.   We are pretty excited about how well it turned out and will definitely be making more.    I'm pretty fortunate that I've got such a cute and resourceful husband who takes dessert as seriously as I do!
